Glossary

Acid Reflux Disease occurs when the lower esophageal sphincter (muscle between the stomach and the esophagus) does not close properly and stomach contents reflux back up into the esophagus. See article here.

caffeine: from my dictionary, a stimulating drug found in coffee and tea, formula C8H10N4O2
See caffeine article here.

calcium propionate: a white crystalline powder added to bakery products as a mold inhibitor. A side benefit is that it adds small amounts of calcium to the diet.

diuretic: something that causes an increase in the flow of urine (which, of course, removes water from your body) Refer to our article about water.

edema: accumulation of excessive bodily fluids, primarily in the feet, ankles, and hands.

trans fat: is made when manufacturers add hydrogen to vegetable oil--a process called hydrogenation. Hydrogenation increases the shelf life and flavor stability of foods containing these fats. See these articles about trans fats - trans fats on labels and revealing trans fats

vitamin: complex organic substances required for the normal growth and nourishment of the body. Lack of vitamins leads to poor health, and, in some cases, disease and death.
